Wild Boar Meatball & Shaved Carrot Salad with Falafel Tahini Dressing

Your new favorite salad.  Really anything with meatballs and Falafel Tahini is amazing. 👌🏻

Ingredients:

3-4 gluten-free Italian style wild boar meatballs (or sub meat of choice in recipe)
1 large carrot
¼ a cucumber
2 radishes
1-2 TBSPs pumpkin seeds
The Functional Nutrition Brand Falafel Tahini Dressing, to taste

Instructions:

  1. Use a peeler to shave carrot into long thin strips.  Add to salad bowl.
  2. Chop cucumber into quarter-moon pieces.  (Quarter moon pieces: Cut cucumber in half lengthwise and cut those 2 pieces in half lengthwise.  Then chop down the length of each piece to make small half-moon slices.)  Add to salad bowl.
  3. Chop radishes and meatballs.  (I prefer warmed meatballs in this salad!)  Add to the bowl along with the pumpkin seeds and top with The Functional Nutrition Brand Falafel Tahini Dressing to taste!
