Sliced Almond and Kale Detox Salad

Raw broccoli is filled with great nutrients for detoxification!  Combined with greens and other nutrient dense foods, this salad is a detox powerhouse!

Prep time: 25 minutes
Yield: ~10 cups

5 cups kale, chopped into ribbons
2 cups broccoli florets, chopped small
1/2 cup sliced almonds
1/2 cup shredded carrot
1/4 cup red onion, chopped small
1/2 cup pumpkin seeds
1 medium apple, chopped
3/4th cup The Functional Nutrition Brand Honey Dijon Dressing

1. Heat frypan to medium-low and add pumpkin seeds. Cook until lightly brown and fragrant, stirring occasionally, about 5-10 minutes. Once done let cool for a few minutes before adding to the salad.
2. Rinse kale and remove the spine. The easiest way to remove the spine is to fold each leaf in half and tear the spine away from the rest of the leaf.
3. Meanwhile shred your carrot. The chop kale, broccoli, onion, and apple. To chop your kale into ribbons: Stack about 4 kale leaves on top of each other and roll them lengthwise.  Chop down the length of the leaves while they are still rolled, making cuts about ¼ to ½ inches away from each other.  These will unravel into “ribbons”.  Repeat the process until all the leaves are chopped.
4. Add all ingredients to a large bowl and stir to coat the Honey Dijon Dressing evenly over the ingredients!
