Pomegranate & Pickled Beet Salad

The nitric oxide from the beets supports healthy blood flow, while the pomegranate seeds promote healthy levels of inflammation in the body!

Yield: 1 salad
Prep time: 15 minutes

Mixed greens
1 very small beet
1 small carrot
1/2 apple
1/2 of a chicken breast
1/8 of a small red onion
1/4 cup walnuts, chopped
White wine vinegar, enough for pickling
The Functional Nutrition Brand Honey Dijon Dressing, to taste

1. Use a food processor or grater to grate the carrot and beet. Chop the onion into long thin strips.
2. Quick pickle the beets and onions. Add the beets and onions to separate small bowls. Add enough white wine vinegar to each bowl until the vegetables are submerged under vinegar. Let sit for at least 5 minutes.
3. Meanwhile, chop the apple, chicken, and walnuts.
4. Line a bowl with the mixed greens. Top with all the ingredients. (If you want to have fun with it, make all the colors create a pinwheel design on the salad!)  Drizzle with The Functional Nutrition Brand Honey Dijon Dressing.*
