Mozzarella & Cucumber Salad

An easy side salad using ripe and juicy grape tomatoes!

1 medium cucumber
½ pint grape (or cherry) tomatoes
4-5 ounces mozzarella cheese*
2-3 TBSPs The Functional Nutrition Brand Honey Dijon Dressing


  1. Rinse vegetables.  Cut each tomato in halves or quarters.  Chop cucumber into quarter moons. (Quarter moon pieces: Cut cucumber in half lengthwise and cut those 2 pieces in half lengthwise.  Then chop down the length of each piece to make small half-moon slices.)
  2. If the mozzarella cheese is already in small balls, then you can just strain those and add to the salad.  Otherwise, chop the mozzarella into small bite-sized chunks.
  3. Add all ingredients to a salad bowl including The Functional Nutrition Brand Honey Dijon Dressing.  Fold to stir and evenly coat the salad with dressing.

*Note: You can use a vegan mozzarella if you are avoiding dairy.
