The crunch and light sweetness of dried apples, mixed with the mouth-watering flavor of feta, makes for an unbeatable flavor combination!
Yield: 1 salad
Prep Time: 10 minutes
3 cups mixed greens
5 oz chicken, cooked through and chilled
~3 TBSP red onion, sliced very thin
1/4 cup feta cheese (use dairy-free if needed)
1/2 cup dried apple
1/4 cup pecans
The Functional Nutrition Brand Sesame Ginger Lime Dressing, to taste
1. Line a bowl with the mixed greens.
2. Chop chicken, onion, and feta cheese. (The vegan cheese I used came in a block and not in feta crumbles.) For the red onion, cut the onion in half. Then cut 3 thin slices from half the onion to make about 3 TBSP. Break up the pieces and sprinkle around the salad. Sprinkle on the chicken and cheese as well.
3. Add the dried apple and the pecans.
4. Dress with The Functional Nutrition Brand Sesame Ginger Lime Dressing, to taste.
