The rich flavor of sun-dried tomatoes meets the toasted flavor of the pumpkin seeds!
1 head crisp lettuce
1/2 cup pumpkin seeds
15-20 sundried tomato halves in oil
The Functional Nutrition Brand Honey Dijon Dressing, to desired amount (suggestion: 1/4-1/2 cup)
- Add pumpkin seeds to frypan. Heat pan to medium-low heat. Toast seeds until fragrant and slightly browned, about 5 mins. Remove from heat.
- Meanwhile, rinse lettuce and dry. Line up a few leaves and chop down length of the spine. Then chop into 1/2 inch ribbons.
- Chop cucumber and radishes. Drain oil from sun-dried tomatoes and chop as well.
- Place all ingredients in large bowl and toss until the Honey Dijon Dressing coats the salad ingredients.
