Chickpea and Sun-dried Tomato Salad

The rich flavor of sun-dried tomatoes meets the toasted flavor of the pumpkin seeds!

Ingredients:⁣⁣

1 head crisp lettuce⁣⁣

1 cucumber⁣⁣

6-7 radishes⁣⁣

1/2 cup pumpkin seeds⁣⁣

15-20 sundried tomato halves in oil⁣⁣

The Functional Nutrition Brand Honey Dijon Dressing, to desired amount (suggestion: 1/4-1/2 cup)⁣⁣

Instructions:⁣⁣

  1. Add pumpkin seeds to frypan. Heat pan to medium-low heat. Toast seeds until fragrant and slightly browned, about 5 mins.  Remove from heat.⁣⁣
  2. Meanwhile, rinse lettuce and dry.  Line up a few leaves and chop down length of the spine. Then chop into 1/2 inch ribbons.⁣⁣
  3. Chop cucumber and radishes. Drain oil from sun-dried tomatoes and chop as well.⁣⁣
  4. Place all ingredients in large bowl and toss until the Honey Dijon Dressing coats the salad ingredients.
