Vegan Paleo Tacos

The fresh flavor of raw veggies, paired with the umami flavor of toasted nuts and seeds, makes this a taco you won't forget!

Yield: 6 wraps
Prep Time: 15 minutes      Cook Time: 5-10 minutes       Total Time: ~20 minutes

6 coconut wraps 
1 cup walnuts
¼ cup pumpkin seeds
¼ of a small red onion
3 romaine lettuce leaves
1 small beet
1 medium carrot
~¼ cup apple cider vinegar
1-2 TBSP The Functional Nutrition Brand Falafel Tahini Dressing


  1. Heat frypan to medium-low and add pumpkin seeds and walnuts. Cook until lightly brown and fragrant, stirring occasionally, about 5-10 minutes.
  2. Chop the onion.  Place in a small jar or dish and fill with apple cider vinegar until the onion is submerged.  Let sit for at least 5 minutes before removing the onion from the vinegar.
  3. Meanwhile, chop lettuce leaves into thin strips.  Use a food processor or grater to grate the carrot and beet.
  4. When the walnuts and pumpkin seeds are done, remove them from the pan.  Add the wraps to the hot pan, heating each one about 15 seconds per side.
  5. Place wraps on plates and fill with walnuts, pumpkin seeds, pickled onion, shaved carrot, shaved beet, and lettuce.  Then top with Falafel Tahini Dressing.
