Cranberry Baked Brie

You won't be able to get over this perfect combination of brie, cranberries, rosemary, and Honey Dijon Dressing!

Prep Time: 10 minutes     Cook Time: 30 minutes    Total Time: 40 minutes

Ingredients:
1 cup cranberries, fresh
½ cup apple cider (or apple juice)
½ cup raw honey
¼ cup pecans
1 grass-fed brie cheese wheel
1 TBSP The Functional Nutrition Brand Honey Dijon Dressing
½ tsp finely chopped fresh rosemary

Instructions:

  1. Preheat oven to 350℉.
  2. In a small pot, add cranberries, apple juice, and honey.  Heat over medium until the mixture comes to a boil, stirring constantly.  Bring heat down to a simmer and cook until the cranberries have popped, about 8-10 minutes, continuing to stir constantly.  Remove from heat and let the mixture cool.
  3. Meanwhile, place pecans in a frypan and heat to low.  Toast the nuts until they are fragrant, about 5-10 minutes, stirring occasionally.  Remove from heat and let cool a bit before chopping the nuts.
  4. Line a small baking dish with parchment paper, and place brie cheese wheel on pan.  Bake the brie until it is softened, about 15 minutes.  (This may be less time if your cheese is room temperature.)  Remove the brie from the oven and drizzle with Honey Dijon Dressing and cranberry sauce.  Place the brie back in the oven and bake until it is warm with a soft consistency, about 5 minutes.
  5. Finely chop rosemary while the brie is cooking.
  6. Remove brie from oven and sprinkle with chopped pecans and rosemary.
